Ingredients

Scale
  • 1/2 cup unsalted butter (melted)
  • 1 large egg
  • 1 cup light brown sugar (packed)
  • 1 tablespoon vanilla extract
  • 2 to 3 teaspoons cinnamon
  • 1 cup all-purpose flour
  • 6 ounces cream cheese (softened)
  • 1/4 cup unsalted butter (for frosting)
  • 1 1/2 cups confectioners’ sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8-by-8-inch baking pan with aluminum foil and lightly spray it with cooking spray.
  2. In a large microwave-safe bowl, mix melted butter with the egg, brown sugar, vanilla extract, and cinnamon until smooth.
  3. Gradually stir in the flour and salt until just combined; avoid overmixing.
  4. Pour the batter into the prepared pan and smooth the top. Bake for about 20 to 24 minutes until set in the center. Cool on a wire rack for at least 90 minutes.
  5. For frosting, beat together softened cream cheese, butter, confectioners’ sugar, vanilla extract, and salt until light and fluffy.
  6. Spread the frosting evenly over cooled blondies and garnish with additional cinnamon if desired.
