  • 3 lb boneless chuck roast
  • 3 lbs yellow onions
  • 2 cloves garlic
  • 1 cup red apple vinegar or extra beef stock
  • 2 ½ cups beef stock
  • 1 tbsp extra virgin olive oil
  • 1/2 tsp fine sea salt
  • 1/2 tsp freshly ground black pepper
  • 1 tbsp maple syrup or brown sugar
  • 1 tbsp all-purpose flour

Instructions

  1. Season the chuck roast with salt and pepper. In a large skillet over medium-high heat, add olive oil and sear the roast until browned on all sides. Remove from skillet.
  2. Slice onions thinly and cook in the same skillet with minced garlic until caramelized. Stir in maple syrup (or brown sugar) and sprinkle with flour.
  3. Gradually pour in red apple vinegar (or extra beef stock) while scraping up browned bits from the skillet.
  4. Transfer the onion mixture to a slow cooker, place the seared roast on top, pour in beef stock, and add rosemary sprig and bay leaf.
  5. Cook on low for 6–8 hours or on high pressure in an Instant Pot for about 60 minutes followed by natural release.
