  • 2 cups granulated sugar
  • 2 teaspoons pure vanilla extract
  • 3 ½ cups cake flour
  • 1 tablespoon baking powder
  • ¼ teaspoon kosher salt
  • 1 cup whole milk
  • ¾ cup chopped Oreo cookies
  • 8 large egg whites, room temperature
  • 1.5 quarts Cookies and Cream ice cream, softened
  • 2 cups whipped cream or store-bought whipped topping
  • Additional chopped Oreo cookies for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large bowl, beat together butter, sugar, and vanilla until fluffy. Gradually add flour, baking powder, and salt; mix well. Slowly pour in milk and stir until smooth. Fold in chopped Oreo cookies.
  3. Divide the batter between prepared pans and bake for about 30 minutes or until a toothpick comes out clean. Cool in pans for 10 minutes before transferring to wire racks.
  4. Once cooled, layer one cake on a serving plate, spread half of the softened ice cream over it, then top with the second layer.
  5. Frost the top and sides of the cake with whipped cream and garnish with additional Oreos. Freeze for at least four hours before serving.
