  • 1 tbsp curry powder

  • 1 tsp garlic powder
  • 15 oz pineapple chunks (in its own juice)
  • 1/2 red bell pepper
  • 1/2 yellow bell pepper
  • 2 chicken breasts (cut into 1-inch cubes)
  • 1 tsp brown sugar
  • 1/2 tsp red pepper flakes
  • cilantro

Instructions

  1. Cook 1.5 cups of basmati rice according to package instructions.
  2. While the rice cooks, chop chicken into 1-inch cubes and bell peppers into strips.
  3. In a large pot over medium heat, sauté chicken until browned (5-7 minutes).
  4. Add bell peppers and cook for an additional 3-4 minutes until softened.
  5. Stir in coconut milk, coconut cream, red curry paste, curry powder, ground ginger, garlic powder, brown sugar, and red pepper flakes; simmer for 5-7 minutes until thickened.
  6. Gently fold in pineapple and simmer for another 2 minutes.
  7. Serve hot over rice with a garnish of fresh cilantro.
