  • 4 cans chicken broth (14.5 oz each)
  • 2 cups shredded rotisserie chicken
  • 1 cup uncooked orzo pasta
  • 3/4 cup light cream
  • 1/2 cup grated Parmesan cheese
  • 1/3 cup fresh squeezed lemon juice
  • 1/3 cup white apple vinegar
  • 4 garlic cloves, grated
  • 1 shallot, finely diced
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 3 oz jar of fried capers, drained
  • 1 tablespoon olive oil

Instructions

  1. In a small pan, heat olive oil over medium heat. Fry drained capers until crispy and set aside.
  2. In a Dutch oven, melt butter and sauté shallots for 2–3 minutes. Add garlic and cook for another minute before stirring in flour.
  3. Pour in chicken broth and apple vinegar; season with salt and pepper. Bring to a boil, then reduce heat and simmer.
  4. Add Parmesan cheese and light cream; cover and simmer for 15 minutes.
  5. Stir in uncooked orzo, shredded chicken, lemon zest, and lemon juice. Cook uncovered for about 10 minutes until the orzo is tender.
  6. Serve hot topped with fried capers and extra Parmesan if desired.
