Ingredients
- 4 toasted croissants
- 3 cups chopped romaine lettuce
- ½ cup shaved Parmesan cheese
- 4–5 boneless, skinless chicken thighs
- 1 large egg
- 2 tbsp flour
- 3 tbsp cornstarch
- Canola oil (for frying)
- ½ cup olive oil (for dressing)
- 2 tbsp fresh lemon juice
- 1 tbsp garlic, minced
- 1 tsp Dijon mustard
- 1 tsp red apple vinegar
- ½ tsp black pepper
- Pinch of salt
- 1 cup panko breadcrumbs
- 4 tbsp unsalted butter
Instructions
- Combine marinade ingredients in a bowl and coat chicken thighs. Marinate for at least 20 minutes.
- Melt butter in a pan over medium-low heat; add panko breadcrumbs and toast until golden brown.
- In a blender, mix dressing ingredients until smooth.
- Heat canola oil in a pot to 350°F (175°C) and fry marinated chicken until golden brown (8-10 minutes). Drain on wire rack.
