  • 4 toasted croissants
  • 3 cups chopped romaine lettuce
  • ½ cup shaved Parmesan cheese
  • 45 boneless, skinless chicken thighs
  • 1 large egg
  • 2 tbsp flour
  • 3 tbsp cornstarch
  • Canola oil (for frying)
  • ½ cup olive oil (for dressing)
  • 2 tbsp fresh lemon juice
  • 1 tbsp garlic, minced
  • 1 tsp Dijon mustard
  • 1 tsp red apple vinegar
  • ½ tsp black pepper
  • Pinch of salt
  • 1 cup panko breadcrumbs
  • 4 tbsp unsalted butter

Instructions

  1. Combine marinade ingredients in a bowl and coat chicken thighs. Marinate for at least 20 minutes.
  2. Melt butter in a pan over medium-low heat; add panko breadcrumbs and toast until golden brown.
  3. In a blender, mix dressing ingredients until smooth.
  4. Heat canola oil in a pot to 350°F (175°C) and fry marinated chicken until golden brown (8-10 minutes). Drain on wire rack.
  5. Assemble sandwiches: mix romaine with dressing and toasted panko; place salad on bottom half of croissant, add chicken, top with more cheese and dressing before covering.
