  • 1 cup cherry tomatoes
  • 1 cup cucumber
  • 1/4 cup red onion
  • 1/2 cup Kalamata olives
  • 8 oz halloumi cheese
  • 2 tbsp lemon juice
  • 2 tbsp olive oil

Instructions

  1. Rinse quinoa under cold water, then combine with 2 cups of water in a large pot. Bring to a boil, reduce heat, cover, and simmer for 15 minutes until water is absorbed. Let sit covered for another 5 minutes.
  2. While quinoa cooks, chop cherry tomatoes, cucumber, and red onion (soak red onion in cold water if desired). Drain before adding to the bowl.
  3. Heat a non-stick skillet over medium-high heat. Slice halloumi into thick pieces and cook in olive oil for about 3 minutes on each side until golden brown.
  4. In a mixing bowl, combine cooked quinoa, chopped veggies, and olives. Drizzle with lemon juice and toss gently.
  5. Serve in bowls topped with crispy halloumi slices.
