- 3/4 cup cake flour
- 1 tsp salt
- 1 cup warm milk
- 3 tbsp unsalted butter
- 3 tbsp granulated sugar
- 2 tsp instant yeast
- 1 egg
- 2 tbsp vegetable oil
- 1 onion
- 1 carrot
- 3 potatoes
- 0.3 lbs ground beef
- 1 tbsp soy sauce
- 1 tbsp ketchup
- 3 cubes Japanese curry roux
- 1 cup water
- 1 tbsp cornstarch
- 1 egg (for egg wash)
- 1 1/2 cups panko breadcrumbs
Instructions
- In a mixing bowl, whisk together bread flour, cake flour, salt, sugar, and instant yeast.
- Melt butter and mix with warm milk; combine with dry ingredients and add one egg. Knead until smooth. Let rise for 60 minutes until doubled.
- For the filling, sauté onion in vegetable oil until translucent, then add diced carrots and potatoes until softened. Add ground beef along with soy sauce, ketchup, curry roux cubes, and water; simmer until thick.
- Punch down risen dough and divide into 16 pieces. Roll each into a circle, fill with 2 tablespoons of curry mixture, fold over, and seal.
- Heat oil to 350°F (175°C) for frying. Dip each bun in egg wash and coat with panko breadcrumbs before frying until golden brown on both sides.
