  • 1 pound large shrimp, peeled and deveined
  • 8 oz lo mein noodles
  • 1 cup bell peppers (mixed red and green), sliced
  • 2 medium carrots, julienned
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • ½ cup low-sodium soy sauce
  • 2 tbsp sesame oil
  • 1 cup vegetable broth

Instructions

  1. Cook the lo mein noodles according to package instructions; drain and set aside.
  2. In a large skillet or wok, heat vegetable oil over medium-high heat. Sauté garlic and ginger for about 30 seconds until fragrant.
  3. Add bell peppers and carrots; stir-fry for about 3 minutes until tender-crisp.
  4. Push veggies to the side, add shrimp, and cook for about 3 minutes until pink.
  5. Whisk together soy sauce, sesame oil, and vegetable broth; pour over shrimp and vegetables.
  6. Add cooked noodles to the skillet; toss everything together until evenly coated. Serve hot.
