  • 3 cups chickpeas
  • 16 oz pasta (e.g., Barilla rotini)
  • 1 green pepper
  • 1 cucumber
  • 1 red onion
  • 2 cups cherry tomatoes
  • 3 tbsp tahini
  • 3/4 cup vinegar (red apple vinegar)
  • 1/2 cup fresh parsley
  • 2.5 tbsp lemon juice
  • 2.5 tsp lemon zest
  • 1 tsp garlic powder
  • 1 tsp oregano
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1.5 tsp maple syrup
  • 1 tbsp Dijon mustard

Instructions

  1. Preheat your oven to 400°F. Pat chickpeas dry and toss them with lemon juice, zest, garlic powder, oregano, salt, and pepper. Spread on a baking sheet and roast for 20-30 minutes until golden.
  2. Cook pasta in salted water according to package directions until al dente, then rinse under cold water.
  3. Whisk together tahini, vinegar, maple syrup, Dijon mustard, oregano, salt, and pepper to make the dressing.
  4. Prepare vegetables: dice green pepper, slice cucumber and onion thinly, halve cherry tomatoes.
  5. In a large bowl, combine cooled pasta and half the dressing. Add roasted chickpeas and all veggies; drizzle remaining dressing over top. Toss gently.
  6. Chill in the refrigerator for at least 15 minutes before serving.
