Ingredients
- 6 oz uncooked mini pasta shells
- 2 mini cucumbers, sliced
- 1 cup cherry tomatoes, halved
- 4 oz colby jack cheese, cubed
- 3 Tbsp red onion, finely chopped
- 2/3 cup mayonnaise
- 1/4 cup grated parmesan cheese
- 2 Tbsp sour cream
- 1/4 cup whole milk
- 3 garlic cloves, minced
- Salt and pepper to taste
- 2 Tbsp lemon juice
- 1/2 tsp dijon mustard
- 1 Tbsp olive oil
Instructions
- Cook the mini pasta shells in boiling water according to package instructions, then drain and rinse under cold water until cool.
- In a bowl, mix together mayonnaise, parmesan cheese, sour cream, whole milk, minced garlic, salt, pepper, lemon juice, dijon mustard, and olive oil; whisk until smooth.
- Slice the cucumbers and halve the cherry tomatoes.
- In a large mixing bowl, combine cooked pasta shells, cucumbers, tomatoes, red onion, and cubed cheese.
- Pour the dressing over the salad mixture and toss gently until well coated.
