  • 2 tablespoons confectioners' sugar
  • 1/2 cup softened cream cheese (4 ounces)
  • 4 ounces melted white chocolate baking squares
  • 1 cup whipping cream
  • 1 tablespoon confectioners' sugar
  • Seeds from a vanilla bean or 1-2 teaspoons vanilla bean paste

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix crushed graham crackers, sugar, egg yolk, vanilla flavoring, and melted butter; press into springform pan.
  2. Bake crust for 10 minutes; cool.
  3. Beat cream cheese and sour cream until smooth. Gradually add cornflour and sugar, then stir in vanilla.
  4. Pour filling over cooled crust; bake for 38 minutes until slightly jiggly. Cool completely and refrigerate for at least 4 hours.
  5. For mousse topping, whip 1 cup of cream until soft peaks form; fold in melted white chocolate mixed with softened cream cheese.
