  • 4 bell peppers (green or yellow)
  • 4 large beefsteak tomatoes
  • 1 ½ cups olive oil (or as needed)
  • 1 large yellow onion
  • 3 garlic cloves
  • 3 tbsp fresh dill, finely chopped
  • 3 tbsp fresh parsley, finely chopped
  • 2 tbsp fresh mint, finely chopped
  • ¾ cup pine nuts
  • ¾ cup chopped dried cranberries (or raisins)
  • 1 cup arborio rice
  • Salt and pepper to season (as needed)
  • 1 tbsp sugar (or as needed)
  • 3 tbsp breadcrumbs (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Hollow out peppers and scoop insides of tomatoes; reserve flesh.
  3. Blend reserved tomato flesh and set aside juice.
  4. Sauté onion and garlic in olive oil until soft.
  5. Mix in blended tomatoes and arborio rice.
  6. Stir in herbs, pine nuts, cranberries, and seasoning.
  7. Stuff vegetables with filling and drizzle with olive oil.
  8. Bake covered for one hour, then uncovered for an additional 30 minutes until done.
