  • 1 ½ pounds boneless skinless chicken thighs
  • Kosher salt
  • ¼ cup harissa paste
  • 2 tablespoons extra-virgin olive oil
  • 2 large garlic cloves (grated or minced)
  • 1 lemon (zested and juiced)
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • ¼ teaspoon coriander
  • ¼ teaspoon cinnamon
  • black pepper
  • Fresh dill for garnish

Instructions

  1. Pat chicken thighs dry with paper towels and season both sides generously with kosher salt.
  2. In a mixing bowl, combine harissa paste, olive oil, grated garlic, lemon juice and zest, paprika, cumin, coriander, cinnamon, and black pepper.
  3. Add chicken to the marinade, tossing until well coated. Let it sit for at least 15 minutes or up to an hour for deeper flavor.
  4. Preheat your grill to medium-high heat. Clean and lightly oil the grates.
  5. Remove chicken from the marinade and grill for about 7-10 minutes per side until charred and the internal temperature reaches 165°F.
  6. Serve hot with fresh dill as garnish.
