  • 1 pinch red chile powder

  • 1/2 teaspoon dried thyme (or 1 1/2 teaspoon fresh thyme)
  • 1/2 teaspoon hot sauce
  • Kosher salt to taste
  • Freshly ground black pepper to taste

Instructions

  1. Make the cowboy butter by melting the butter in a saucepan over low heat. Stir in lemon juice, garlic, shallots, Dijon mustard, horseradish, red chile powder, and paprika. Mix in fresh herbs and hot sauce. Season to taste with salt and pepper.
  2. Pat the steaks dry and season generously with salt and pepper.
  3. Preheat your grill: gas grills should reach 500°F; charcoal should be white-hot before reducing to 350°F.
  4. Grill steaks for about 4-5 minutes on one side until golden brown; flip and cook to desired doneness (3-5 minutes for medium rare).
