- 1 lb elbow macaroni or small pasta shells
- 1 cup shredded carrots
- 1 cup finely chopped celery
- 1 small finely diced red bell pepper
- ½ cup finely diced red onion
- ½ cup sweet pickle relish
- 1 cup mayonnaise
- ¼ cup sour cream
- 2 tbsp Dijon mustard
- 2 tbsp apple cider vinegar
- 1 tsp granulated sugar
- ½ tsp paprika
- ½ tsp garlic powder
- ½ tsp onion powder
- Salt and freshly ground black pepper, to taste
Instructions
- Boil water in a large pot and cook the macaroni until al dente. Drain and rinse under cold water.
- In a large mixing bowl, combine chopped vegetables and sweet pickle relish.
- In another bowl, whisk together mayonnaise, sour cream, Dijon mustard, apple cider vinegar, sugar, paprika, garlic powder, onion powder, salt, and pepper until smooth.
- Mix cooled pasta into the vegetable bowl and pour the dressing over it. Toss gently to coat.
- Cover and refrigerate for at least one hour before serving.
