  • 15 ounces canned chickpeas (rinsed, drained, and dried)
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 3 tablespoons olive oil
  • 2 tablespoons red apple vinegar
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon salt
  • 1 teaspoon Dijon mustard
  • 1 large block Halloumi cheese (approximately 1 cup)
  • 6 cups mixed greens
  • 1 cup halved cherry tomatoes
  • 1 cup cucumbers (sliced)
  • 1/2 red onion (thinly sliced)

Instructions

  1. Preheat the grill pan over medium heat. In a mixing bowl, toss rinsed chickpeas with olive oil, salt, garlic powder, and smoked paprika.
  2. Cook seasoned chickpeas in the hot grill pan for about 5-7 minutes until slightly crispy.
  3. Whisk together dressing ingredients in a small bowl: olive oil, red apple vinegar, dried basil, salt, and Dijon mustard.
  4. Grill Halloumi slices for 2-3 minutes on each side until golden brown.
  5. Assemble the salad by layering mixed greens with cherry tomatoes, cucumbers, and red onion. Top with crispy chickpeas and grilled Halloumi slices; drizzle with dressing before serving.
