Ingredients
- 16 oz protein-enriched pasta
- 1 cucumber
- 1 pint tomatoes
- 1 red bell pepper
- 1 yellow bell pepper
- 1 red onion
- 5 oz feta cheese
- 2 tbsp fresh dill
- 2/3 cup olive oil
- 1/2 cup red apple vinegar
- 1 lemon
- 1 tbsp oregano
- 1/2 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp pepper
Instructions
- Prepare your vegetables by slicing the cucumber, dicing the bell peppers, slicing the onion, and halving the tomatoes.
- Cook the pasta according to package directions until al dente. Drain and rinse under cold water.
