- 10–12 organic lemons (zest only)
- 750 ml high-proof lemon juice (or grain alcohol alternative)
- 4 cups water
- 3 cups sugar
Instructions
- Thoroughly wash the lemons and zest them carefully, avoiding the white pith.
- Place lemon zest in a large glass jar and pour in high-proof lemon juice. Seal the jar and store it in a cool, dark place for 7–30 days, shaking occasionally.
- After infusion, combine water and sugar in a saucepan over low heat until dissolved. Let cool completely.
- Strain the lemon peels from the infused liquid using a strainer or cheesecloth.
- Mix the cooled syrup with the strained lemon infusion until well combined.
- Bottle your limoncello in clean glass containers and let it rest for at least one week before serving.
- Serve chilled from the freezer for optimal enjoyment.
