  • 15 oz can corn kernels
  • 3 small peaches, diced
  • 2 cups cherry tomatoes, sliced
  • 1/2 cup basil, chopped
  • 1/2 cup extra virgin olive oil
  • 1/3 cup hot honey
  • 1 tbsp dijon mustard
  • 3 tbsp red apple vinegar
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp pepper

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Arrange turkey slices on the baking sheet and bake for 10-15 minutes until crispy. Set aside to cool.
  3. In a large mixing bowl, combine cooked tortellini, mozzarella balls, corn kernels, diced peaches, sliced cherry tomatoes, and chopped basil.
  4. For the dressing: whisk together olive oil, hot honey, Dijon mustard, red apple vinegar, minced garlic, salt, and pepper in a glass measuring cup.
  5. Chop crispy turkey slices into small pieces and add them to the salad mixture. Pour dressing over everything and toss gently until well combined.
