  • 6 small wooden ice lolly sticks
  • 11 small apples (mix of sizes for variety)
  • 660 g sugar (1 cup for toffee, 2 cups for candy)
  • 350 ml water (scant 1/2 cup for toffee, 1 cup for candy)
  • 75 g corn syrup (or glucose syrup)
  • Red food coloring (paste)

Instructions

  1. Prepare your workspace by lining a tray with greaseproof paper.
  2. Wash and dry the apples thoroughly.
  3. Insert wooden sticks securely into each apple.
  4. For the toffee coating: Combine sugar and water in a deep pot, dissolve over low heat, then add corn syrup and butter. Boil until it reaches between 132°C–143°C (270°F–290°F).
  5. Dip each apple in the caramel, twisting gently for an even coat, then place on the prepared tray.
  6. For red candy apples: Mix sugar, water, corn syrup, and food coloring in the pot. Bring it to a boil until it reaches 143°C (290°F). Coat the apples as before.
