- 2 cups All-Purpose Flour

- 3/4 cup Unsweetened Cocoa Powder
- 1 tablespoon Baking Powder
- 1 teaspoon Baking Soda
- 1 teaspoon Salt
- 1 cup Buttermilk (or yogurt with vinegar)
- 1/2 cup Vegetable Oil (or melted coconut oil)
- 2 large Eggs (or flaxseed meal with water)
- 2 teaspoons Vanilla Extract
- 1 cup Boiling Water
- 2 cups Fresh Strawberries
- 1 tablespoon Lemon Juice
- 8 ounces Dark Chocolate
- 2 tablespoons Coconut Oil
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, whisk buttermilk, vegetable oil, eggs, and vanilla extract together.
- Combine wet and dry ingredients and gradually add boiling water until smooth.
- Pour batter into a greased 9-inch round pan and bake for 30-35 minutes or until a toothpick comes out clean.
- Cool for 10 minutes before transferring to a cooling rack.
- Slice strawberries and toss them with lemon juice.
- Melt dark chocolate with coconut oil over low heat until smooth.
- Once the cake is cooled, slice it horizontally into two layers; layer strawberries in between and pour chocolate over the top.
- Chill until set before serving.
