  • 3 eggs, separated
  • 2 tablespoons unflavored zero carb protein powder
  • 2 tablespoons almond flour
  • 2 oz cream cheese, softened
  • 1 tablespoon sugar-free sweetener
  • 1/2 teaspoon cream of tartar
  • 1/2 cup boiling water
  • 2 1/2 tablespoons powdered sugar-free sweetener for jelly filling
  • 1/2 teaspoon konjac gum powder
  • 1/2 teaspoon lemon juice for jelly filling
  • 1/4 teaspoon flavor extract for jelly filling

Instructions

  1. Preheat oven to 325°F (163°C). Line a baking tray with parchment paper.
  2. In one bowl, mix egg yolks with protein powder, almond flour, cream cheese, and sweetener until smooth.
  3. In another bowl, whip egg whites until frothy; add cream of tartar and whip until stiff peaks form.
  4. Gently fold the yolk mixture into the whipped egg whites.
  5. Spoon batter onto the prepared baking tray, creating wells for the jelly.
  6. Bake for about 12 minutes until golden brown.
  7. For filling, mix konjac gum and sweetener in boiling water; add lemon juice and flavor extract.
  8. Once pastries cool, fill wells with jelly.
