  • 1 whole chicken (46 pounds)
  • 2 teaspoons Italian seasoning
  • 1 teaspoon garlic powder
  • 2 tablespoons melted butter
  • Juice from 2 lemons (or 6 tablespoons concentrated lemon juice)
  • 1 cup chicken broth
  • Salt and pepper to taste
  • 1/2 teaspoon mustard powder
  • 1/2 teaspoon pepper
  • 12 teaspoons arrowroot powder (optional)

Instructions

  1. Prepare the seasoning by mixing Italian seasoning, garlic powder, salt, mustard powder, and pepper in a bowl.
  2. Pat the chicken dry with paper towels.
  3. Place a trivet inside the Instant Pot and add chicken broth. Position the chicken on top.
  4. Mix melted butter with lemon juice; pour half under the chicken skin and drizzle the rest on top.
  5. Season generously with the spice mixture.
  6. Lock the lid and cook on high pressure for 6 minutes per pound. Allow a natural pressure release for 15 minutes.
  7. Transfer to a baking tray and broil until golden brown (about 3 minutes).
  8. For optional gravy, mix arrowroot powder into any juices left in the pot on sauté mode until thickened.
