  • 3 1/2 cups shredded mozzarella cheese
  • 1 1/2 cups almond flour
  • 1 egg
  • 1 teaspoon baking powder
  • 1 teaspoon xanthan gum
  • 1 pound ground beef
  • 2 tablespoons taco seasoning
  • 1 cup sour cream
  • 1 cup shredded Mexican blend cheese
  • 2 cups shredded lettuce
  • 1 tomato, diced
  • cilantro, guacamole, jalapenos, optional additional toppings

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Melt mozzarella cheese in a microwave-safe bowl for about 2 minutes.
  3. In a food processor, combine melted cheese with almond flour, egg, baking powder, and xanthan gum until a dough forms.
  4. Roll out the dough between parchment paper into a circle larger than your pie pan.
  5. Transfer dough to the pie pan and bake for 10 minutes.
  6. Brown ground beef in a skillet over medium heat; add taco seasoning.
  7. Lower oven temperature to 375°F (190°C). Assemble by layering cheese, beef mixture, sour cream, and remaining cheese in the crust.
  8. Bake for another 6-8 minutes until bubbly.
  9. Let cool slightly before adding fresh toppings.
