  • 1 cup all-purpose flour
  • ¼ cup powdered sugar
  • ¼ tsp salt
  • ½ cup butter (cut into 8 pieces)
  • 1¼ cup granulated sugar
  • ¼ cup all-purpose flour (for filling)
  • 4 large eggs
  • 2 tsp lime zest
  • ⅓ cup fresh lime juice

Instructions

  1. Preheat your oven to 350°F (175°C). Grease or line an 11×7-inch baking dish with parchment paper.
  2. For the crust, combine 1 cup of flour, powdered sugar, salt, and butter in a food processor. Pulse until crumbly. Press into the prepared pan and bake for 18-20 minutes until golden.
  3. For the filling, whisk together granulated sugar and ¼ cup flour in a bowl. Add eggs one at a time, mixing well after each addition. Stir in lime zest and juice until smooth.
  4. Pour the filling over the hot crust and return to the oven for another 18-20 minutes, or until set.
  5. Allow to cool completely before chilling in the refrigerator for at least an hour. Cut into bars and serve.
