Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter, softened
  • ¼ cup granulated sugar
  • 2 cups fresh or frozen mango puree
  • 2 large eggs
  • ½ cup granulated sugar (for filling)
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • A pinch of salt
  • 1 teaspoon vanilla extract
  • ¼ cup shredded coconut (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a medium bowl, mix flour, sugar, salt, butter, and vanilla until crumbly. Press into the bottom of the prepared pan.
  3. Bake the crust for 12-15 minutes until lightly golden, then cool slightly.
  4. Combine mango puree, sugar, cornstarch, lemon juice, and salt in a saucepan; cook over medium heat until thickened.
  5. Remove from heat and whisk in eggs and vanilla until smooth.
  6. Pour the filling over the cooled crust and bake for an additional 20-25 minutes until set.
  7. Cool completely at room temperature before refrigerating for at least 1-2 hours.
  8. Cut into bars and serve chilled.
