- 2 cups fresh or frozen mango puree
- 2 large eggs
- ½ cup granulated sugar (for filling)
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
- A pinch of salt
- 1 teaspoon vanilla extract
- ¼ cup shredded coconut (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- In a medium bowl, mix flour, sugar, salt, butter, and vanilla until crumbly. Press into the bottom of the prepared pan.
- Bake the crust for 12-15 minutes until lightly golden, then cool slightly.
- Combine mango puree, sugar, cornstarch, lemon juice, and salt in a saucepan; cook over medium heat until thickened.
- Remove from heat and whisk in eggs and vanilla until smooth.
- Pour the filling over the cooled crust and bake for an additional 20-25 minutes until set.
- Cool completely at room temperature before refrigerating for at least 1-2 hours.
- Cut into bars and serve chilled.
