  • 1.5 lbs boneless, skinless chicken breasts
  • 3 tbsp extra virgin olive oil
  • 2 medium zucchini
  • 2 red bell peppers
  • 1 large red onion
  • 2 cups cherry tomatoes
  • 1 cup kalamata olives
  • 4 cloves garlic
  • ¼ cup sun-dried tomatoes
  • 2 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp dried thyme
  • Juice of 1 lemon
  • ½ cup feta cheese (optional)
  • Salt (to taste)
  • Black pepper (to taste)

Instructions

  1. Prepare all ingredients by washing and chopping vegetables and cutting chicken into bite-sized pieces.
  2. Heat olive oil in a non-stick skillet or wok over medium-high heat.
  3. Add chicken to the skillet; season with salt and pepper, cooking until golden brown (about 5–7 minutes).
  4. Add zucchini, red bell peppers, onion, cherry tomatoes, olives, garlic, and sun-dried tomatoes; stir well.
  5. Mix in dried oregano, basil, and thyme; cook for another 5–8 minutes until veggies are tender yet crisp.
  6. Drizzle with lemon juice before removing from heat; toss gently.
  7. Serve topped with crumbled feta cheese and fresh parsley.
