- 8 oz. rotini or penne pasta
- 1 cup cherry tomatoes
- 1 cup cucumber
- 1/2 cup red onion
- 1/2 cup bell pepper
- 1 cup feta cheese
- 1/2 cup Kalamata olives
- Fresh parsley
- Fresh basil
- 1/3 cup olive oil
- 1/4 cup red apple vinegar
- 1 tsp. Dijon mustard
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- Cook the pasta in salted water until al dente (about 8-10 minutes). Drain and rinse under cold water.
- In a large mixing bowl, combine cooked pasta with cherry tomatoes, cucumber, red onion, bell pepper, feta cheese, Kalamata olives, parsley, and basil.
