  • 1 tsp pure vanilla extract
  • 2 large eggs
  • ½ cup sour cream
  • ½ cup strong coffee, room temp
  • 1 Tbsp instant espresso powder
  • ½ cup unsalted butter, softened for frosting
  • 3 cup confectioners' sugar
  • 3 Tablespoon heavy cream or milk
  • 2 teaspoon instant espresso powder for frosting
  • 1 teaspoon pure vanilla extract for frosting
  • ¼ teaspoon kosher salt for frosting
  • 13 pieces chocolate covered espresso beans for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In one bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, cream the butter and sugars until light and fluffy.
  4. Beat in the eggs one at a time, followed by vanilla extract.
  5. Mix in sour cream, brewed coffee, and instant espresso until smooth.
  6. Gradually fold in dry ingredients until just combined.
  7. Pour batter into prepared liners, filling them two-thirds full.
  8. Bake for 25 minutes or until a toothpick comes out clean. Cool on a rack.
  9. For frosting, beat butter until creamy, then gradually add confectioners' sugar, cream, espresso powder, vanilla extract, and salt until fluffy.
  10. Frost cooled cupcakes generously and garnish with chocolate-covered coffee beans.
