Ingredients
- 30 Oreo cookies (for crust)
- 5 tablespoons unsalted butter (melted)
- 24 oz cream cheese
- 1 cup granulated sugar
- 1 tablespoon cornstarch
- 1 cup sour cream
- 1 teaspoon vanilla extract
- 3 large eggs
- 12–15 Oreo cookies (chopped)
- 4 oz semi-sweet chocolate (for ganache)
- 1/2 cup whipping cream

- 4–5 Oreos (chopped or crushed, for decorating)
Instructions
- Preheat oven to 325F (170C). Wrap a 9-inch springform pan with aluminum foil.
- Crush 30 Oreos into fine crumbs; mix with melted butter and press into the bottom of the pan.
- Beat cream cheese and sugar until smooth. Add sour cream, cornstarch, vanilla extract, and eggs one at a time, mixing well.
- Fold in chopped Oreos gently and pour mixture over crust.
- Bake in a water bath for about 55 minutes until set but slightly jiggly.
- Cool in the oven with the door ajar for an hour, then refrigerate for at least four hours.
- Prepare ganache by heating whipping cream and stirring in chopped chocolate until smooth; pour over chilled cheesecake before serving.
