  • 3 cups grated carrots (lightly packed)
  • 3/4 cup chopped walnuts
  • 1/2 cup raisins (optional)
  • 1 (8-ounce) package cream cheese (softened to room temperature)
  • 1/2 cup unsalted butter (softened to room temperature)
  • 2 cups powdered sugar
  • 1 teaspoon pure vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your baking pan(s).
  2. In a large bowl, whisk together flour, baking powder, baking soda, spices, and salt.
  3. In another bowl, mix oil, eggs, sugars, crushed pineapple, and vanilla until well combined.
