  • 3 tablespoons extra-virgin olive oil
  • 2 medium shallots, thinly sliced
  • 3 portobello mushroom caps, sliced into 1-inch pieces
  • 8 ounces pappardelle pasta
  • 1 garlic clove, finely sliced
  • 2 teaspoons fresh rosemary leaves, chopped
  • ½ teaspoon crushed red pepper
  • 2 tablespoons tomato paste
  • 1 teaspoon balsamic vinegar
  • 2 tablespoons unsalted butter

Instructions

  1. In a large skillet over medium heat, combine olive oil, shallots, and a pinch of salt. Cook until softened.
  2. Add the portobello mushrooms and cook until they begin to brown and their liquid evaporates.
  3. Meanwhile, boil water in a large pot. Add salt and cook pappardelle according to package instructions until al dente; reserve ¾ cup of pasta water before draining.
  4. Stir in garlic, rosemary, crushed red pepper, tomato paste, balsamic vinegar, butter, and reserved pasta water into the skillet with mushrooms. Mix until saucy.
  5. Toss cooked pappardelle in the skillet to coat with the sauce. Serve warm.
