  • 8 oz flank, skirt, or sirloin steak, thinly sliced
  • 2 (7 oz) packs cooked or frozen udon noodles
  • 1 tbsp vegetable oil
  • ½ small onion, thinly sliced
  • 3 garlic cloves, minced
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp hoisin sauce
  • 1 tsp sugar
  • 1 tbsp cornstarch mixed with 3 tbsp water (slurry)
  • 1 tsp freshly cracked black pepper
  • Optional: scallions and sesame seeds for garnish

Instructions

  1. Thinly slice the beef against the grain and lightly season with salt and pepper. Toss with soy sauce and cornstarch if desired.
  2. In a small bowl, mix together soy sauce, hoisin sauce, sugar, black pepper, sesame oil, and cornstarch slurry; set aside.
  3. Heat oil in a large skillet over medium-high heat. Sear beef slices until browned, about 3-4 minutes. Remove from pan.
  4. Sauté garlic and onion in the same skillet for 1-2 minutes until fragrant.
  5. Add udon noodles and prepared sauce to the skillet; toss until well combined and heated through.
  6. Return beef to the pan and mix until everything is hot. Serve immediately topped with optional scallions or sesame seeds.
