  • 1 cup shredded carrots
  • 1 cup thinly sliced cucumber
  • 1 cup shredded purple cabbage
  • 1 cup fresh mint leaves
  • 1 cup fresh cilantro leaves
  • 1 avocado, thinly sliced
  • 1 cup cooked rice vermicelli noodles
  • 1/4 cup peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon lime juice
  • 1 clove garlic, minced
  • 1/4 cup water

Instructions

  1. Wash and prepare all vegetables and herbs by shredding, slicing, or chopping as needed.
  2. Cook rice vermicelli noodles according to package instructions; drain and set aside.
  3. Soften each rice paper wrapper by dipping it in warm water for about 5 seconds until pliable.
  4. Lay the softened wrapper flat on a clean surface and layer a small amount of each vegetable, herb, avocado slices, and noodles in the center.
  5. Fold in the sides of the wrapper then roll tightly from the bottom to enclose all fillings; repeat until all wrappers are filled.
  6. For the peanut sauce, whisk together peanut butter, soy sauce, honey, lime juice, minced garlic, and water until smooth.
  7. Serve the rolls chilled or at room temperature with peanut sauce on the side for dipping.
