  • 200 g dark chocolate
  • 200 g unsalted butter
  • 275 g caster sugar
  • 4 medium eggs (or 3 large)
  • 150 g plain flour
  • 50 g cocoa powder
  • 300 g raspberries
  • 150 g chocolate chips

Instructions

  1. Preheat your oven to 180°C (160°C Fan) and line a 9×9 inch baking tin with parchment paper.
  2. In a saucepan, melt the dark chocolate, butter, and caster sugar over low heat until smooth.
  3. Allow the mixture to cool for about 10 minutes before adding eggs one at a time, stirring well after each addition.
  4. Mix in plain flour and cocoa powder until just combined.
  5. Gently fold in two-thirds of the raspberries.
  6. Pour the batter into the prepared tin, sprinkle with remaining raspberries and chocolate chips.
  7. Bake for 30-35 minutes until soft but set in the center. Let cool completely before slicing.
