Ingredients
- 2 egg yolks
- 2 1/2 tablespoons sugar
- 1/2 teaspoon vanilla extract
- 1 cup mascarpone cheese (room temperature)
- 2/3 cup heavy cream
- 5–6 ladyfingers
- 1/4 cup cold-brewed coffee
- 1 1/4 cups fresh raspberries
- Cocoa powder (for dusting)
Instructions
- In a heatproof bowl, whisk together egg yolks and sugar until pale yellow. Set over simmering water and stir constantly for about 5-7 minutes until thickened. Remove from heat and let cool slightly.
- Mix in vanilla extract, then fold in mascarpone cheese until smooth. Whip heavy cream until stiff peaks form, then gently fold into mascarpone mixture.
- Lightly soak each ladyfinger with cold-brewed coffee and cut them into pieces. Layer soaked ladyfingers at the bottom of serving glasses followed by mascarpone mixture and raspberries. Repeat layers and finish with mascarpone on top. Dust with cocoa powder and refrigerate for at least 1 hour before serving.
