  • 4 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 large cucumber, diced
  • 1 ripe avocado, sliced
  • ½ cup plain Greek yogurt
  • 2 tbsp freshly squeezed lemon juice
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Preheat grill or oven to medium-high heat (375°F /190°C). Season chicken breasts with salt and pepper.
  2. Grill or bake chicken until cooked through (165°F internal temperature), about 6-7 minutes per side on the grill or 20-25 minutes in the oven. Let cool slightly before slicing.
  3. Chop romaine lettuce into bite-sized pieces. Halve cherry tomatoes, dice cucumber, and slice avocado.
  4. In a small bowl, whisk together Greek yogurt, lemon juice, Dijon mustard, salt, and pepper until smooth; adjust seasoning if needed.
  5. In a large mixing bowl, combine lettuce, tomatoes, cucumber, avocado slices, and sliced chicken. Drizzle with dressing and mix gently until everything is coated.
