  • 2 cooked and shredded chicken breasts (about 1 pound)
  • 3 cups shredded romaine lettuce
  • 1 cup shredded red cabbage
  • 1 cup grated carrots
  • 1 cup mandarin oranges (drained)
  • 4 chopped green onions
  • ¼ cup chopped cilantro
  • ⅓ cup sliced almonds
  • ½ cup olive oil
  • ¼ cup rice vinegar
  • 2 tablespoons light soy sauce
  • 2 tablespoons honey
  • 1 tablespoon sesame seeds
  • ½ teaspoon garlic powder
  • ½ teaspoon ground ginger

Instructions

  1. In a small bowl or jar, whisk together the dressing ingredients until well combined.
  2. Pour half of the dressing over the shredded chicken and toss to coat.
  3. In a large mixing bowl, combine romaine lettuce, red cabbage, carrots, mandarin oranges, green onions, cilantro, and almonds; mix well.
