Ingredients
- 500 g Penne Pasta
- 400 g Shrimp (cleaned)
- 1/4 cup Extra Virgin Olive Oil
- 1 Lemon (juiced and zested)

- 1 large Avocado (cubed)
- 250 g Cherry Tomatoes (halved)
- 3–4 Spring Onions (chopped)
- 1/2 cup Basil Leaves
Instructions
- Cook the penne pasta in salted boiling water until al dente, adding the shrimp during the last 2-3 minutes of cooking. Drain and rinse under cold water.
- In a mixing bowl, whisk together olive oil, lemon juice and zest, crushed garlic, and black pepper to create the dressing.
- In a large bowl, combine the pasta and shrimp with the dressing. Gently fold in the avocado, cherry tomatoes, spring onions, and basil leaves.
