  • 500 g Penne Pasta
  • 400 g Shrimp (cleaned)
  • 1/4 cup Extra Virgin Olive Oil
  • 1 Lemon (juiced and zested)
  • 1 t Fresh Garlic (crushed)
  • 1 large Avocado (cubed)
  • 250 g Cherry Tomatoes (halved)
  • 34 Spring Onions (chopped)
  • 1/2 cup Basil Leaves

Instructions

  1. Cook the penne pasta in salted boiling water until al dente, adding the shrimp during the last 2-3 minutes of cooking. Drain and rinse under cold water.
  2. In a mixing bowl, whisk together olive oil, lemon juice and zest, crushed garlic, and black pepper to create the dressing.
  3. In a large bowl, combine the pasta and shrimp with the dressing. Gently fold in the avocado, cherry tomatoes, spring onions, and basil leaves.
