  • 1 cup shelled unsalted pistachios
  • 1/4 cup granulated sugar
  • 3 tbsp unsalted butter softened
  • 1 tsp ground cinnamon
  • 2 tbsp heavy cream or whole milk
  • 1/2 tsp pure vanilla extract
  • 4 oz cream cheese softened
  • 1 cup powdered sugar sifted
  • 23 tbsp whole milk or plant-based milk
  • 2 tbsp pistachio paste or finely ground pistachios
  • 1/2 tsp pure vanilla extract
  • Pinch of salt
  • 1/4 cup roughly chopped pistachios

Instructions

  1. Proof the yeast in warm milk with sugar for 5–10 minutes until bubbly.
  2. Combine flour, salt, egg, and yeast mixture in a stand mixer. Mix and gradually add softened butter until smooth.
  3. Knead the dough for 8–10 minutes until elastic. Let it rise in an oiled bowl until doubled (1–1.5 hours).
  4. Prepare the pistachio filling by processing pistachios into a paste with sugar, butter, cinnamon, cream, and vanilla.
  5. Roll out the dough into a rectangle and spread the filling evenly. Roll tightly and cut into six pieces.
  6. Place rolls cut-side up in a greased baking pan and let rise again (45–60 minutes).
  7. Bake at 350°F for 22–26 minutes until golden brown.
  8. For frosting, beat cream cheese until smooth; mix in powdered sugar and milk to desired consistency.
  9. Frost warm rolls and top with chopped pistachios before serving.
