- 3 tbsp unsalted butter softened
- 1/2 tsp salt
- 1 cup shelled unsalted pistachios
- 1/4 cup granulated sugar
- 3 tbsp unsalted butter softened
- 1 tsp ground cinnamon
- 2 tbsp heavy cream or whole milk
- 1/2 tsp pure vanilla extract
- 4 oz cream cheese softened
- 1 cup powdered sugar sifted
- 2 – 3 tbsp whole milk or plant-based milk
- 2 tbsp pistachio paste or finely ground pistachios
- 1/2 tsp pure vanilla extract
- Pinch of salt
- 1/4 cup roughly chopped pistachios
Instructions
- Proof the yeast in warm milk with sugar for 5–10 minutes until bubbly.
- Combine flour, salt, egg, and yeast mixture in a stand mixer. Mix and gradually add softened butter until smooth.
- Knead the dough for 8–10 minutes until elastic. Let it rise in an oiled bowl until doubled (1–1.5 hours).
- Prepare the pistachio filling by processing pistachios into a paste with sugar, butter, cinnamon, cream, and vanilla.
- Roll out the dough into a rectangle and spread the filling evenly. Roll tightly and cut into six pieces.
- Place rolls cut-side up in a greased baking pan and let rise again (45–60 minutes).
- Bake at 350°F for 22–26 minutes until golden brown.
- For frosting, beat cream cheese until smooth; mix in powdered sugar and milk to desired consistency.
