- 2 racks of St. Louis-style beef ribs
- ½ cup packed dark brown sugar
- 2 tablespoons chili powder
- 1 tablespoon salt
- 1 tablespoon black pepper
- 1 tablespoon garlic powder
- 2 teaspoons mustard powder
- 2 teaspoons onion powder
- 2 teaspoons smoked paprika
- 1 teaspoon ground allspice
- 1 teaspoon cayenne pepper
- 2 cups apple cider or apple juice (divided)
- 4 tablespoons salted butter (divided)
Instructions
- In a small bowl, mix together dark brown sugar, chili powder, salt, black pepper, garlic powder, mustard powder, onion powder, smoked paprika, ground allspice, and cayenne pepper.
- Remove the membrane from the ribs and pat them dry. Rub both sides generously with the spice mixture.
- Preheat your smoker to 225°F. Smoke the ribs for three hours.
- Wrap each rack in foil with apple cider and butter; smoke for an additional two hours.
- Unwrap and brush with BBQ sauce; smoke for one more hour.
