  • 1 (10-ounce) bag mini vegan marshmallows (plus 1 cup extra)
  • 6 cups Rice Krispies cereal
  • 1 ½ cups graham cracker crumbs (broken into small chunks)
  • 1 ½ cups semi-sweet chocolate chunks
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Line a 9×13-inch baking dish with parchment paper and grease lightly.
  2. In a large pot, melt butter over medium heat. Stir in mini vegan marshmallows (reserve 1 cup) until smooth.
  3. Remove from heat; mix in Rice Krispies cereal until evenly coated. Gently fold in graham cracker chunks, reserved marshmallows, and half of the chocolate.
  4. Press mixture into the prepared pan gently. Sprinkle remaining chocolate on top and lightly press.
  5. Allow to cool at room temperature for about 30 minutes before slicing into squares.
