Ingredients
- 4 tablespoons unsalted butter
- 1 (10-ounce) bag mini vegan marshmallows (plus 1 cup extra)
- 6 cups Rice Krispies cereal
- 1 ½ cups graham cracker crumbs (broken into small chunks)
- 1 ½ cups semi-sweet chocolate chunks
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Line a 9×13-inch baking dish with parchment paper and grease lightly.
- In a large pot, melt butter over medium heat. Stir in mini vegan marshmallows (reserve 1 cup) until smooth.
- Remove from heat; mix in Rice Krispies cereal until evenly coated. Gently fold in graham cracker chunks, reserved marshmallows, and half of the chocolate.
- Press mixture into the prepared pan gently. Sprinkle remaining chocolate on top and lightly press.
- Allow to cool at room temperature for about 30 minutes before slicing into squares.
