Ingredients

  • 1 medium spaghetti squash
  • 1 tbsp olive oil
  • 2 cloves garlic
  • 2 cups fresh spinach
  • 1 can canned artichokes
  • 4 oz cream cheese
  • 2 tbsp mayonnaise
  • 1/2 cup parmesan cheese
  • 1/2 cup mozzarella cheese (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds. Brush with olive oil and season lightly with salt.
  3. Place cut-side down on a baking sheet and roast for about 40–45 minutes until tender.
  4. Meanwhile, mix cream cheese, mayonnaise, minced garlic, spinach, artichokes, parmesan, and mozzarella in a bowl until well combined. Season to taste.
  5. Once roasted, flip each squash half over and fill generously with the creamy mixture. Sprinkle additional parmesan on top.
  6. Bake for another 20 minutes until golden brown and bubbly. Allow to cool slightly before serving.
