Ingredients
- 1 medium spaghetti squash
- 1 tbsp olive oil
- 2 cloves garlic
- 2 cups fresh spinach
- 1 can canned artichokes
- 4 oz cream cheese
- 2 tbsp mayonnaise
- 1/2 cup parmesan cheese
- 1/2 cup mozzarella cheese (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the spaghetti squash in half lengthwise and scoop out the seeds. Brush with olive oil and season lightly with salt.
- Place cut-side down on a baking sheet and roast for about 40–45 minutes until tender.
- Meanwhile, mix cream cheese, mayonnaise, minced garlic, spinach, artichokes, parmesan, and mozzarella in a bowl until well combined. Season to taste.
- Once roasted, flip each squash half over and fill generously with the creamy mixture. Sprinkle additional parmesan on top.
- Bake for another 20 minutes until golden brown and bubbly. Allow to cool slightly before serving.
