- 2 Large eggs
- ½ cup milk
- ½ cup vegetable oil
- 1 tsp vanilla extract
- 1 ¼ cup fresh strawberries (diced)
- 1 tbsp flour (for tossing strawberries)
- ⅓ cup all-purpose flour (for crumb topping)
- 3 tbsp granulated sugar (for crumb topping)
- 3 tbsp unsalted butter (for crumb topping)
Instructions
- Preheat your oven to 375°F (190°C) and line or grease a muffin tin.
- In a bowl, beat together cream cheese, granulated sugar, egg yolk, and vanilla extract until smooth.
- In another bowl, mix flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together eggs, milk, oil, and vanilla extract.
- Combine the wet ingredients with the dry ingredients without overmixing.
- Toss diced strawberries in flour to prevent sinking and fold them gently into the batter.
- Fill muffin cups halfway with batter; add cream cheese filling and cover with remaining batter.
