  • 1 cup chopped strawberries
  • 1/2 cup buttermilk
  • 1 tsp vanilla extract
  • 1 egg
  • 1 tbsp milk
  • 1/2 cup chopped strawberries (for glaze)
  • 1 tbsp white sugar (for glaze)
  • 1 cup powdered sugar

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. In another bowl, mix the buttermilk, vanilla extract, and egg until well combined.
  5. Gradually add the wet mixture to the dry ingredients and gently fold in the chopped strawberries.
  6. On a floured surface, shape the dough into an 8-inch circle and wrap it in plastic wrap; freeze for 30 minutes.
  7. Cut the dough into triangles and place them on the prepared baking sheet. Brush with milk before baking for 13–15 minutes until golden brown.
