Ingredients
- 2 medium butternut squash
- 2 tbsp olive oil
- 2 tbsp honey
- 2 cups cooked chicken, shredded
- 1 small onion, diced
- 2 cloves garlic, minced
- 1/4 cup chicken broth
- 1/4 cup grated Parmesan cheese
- Optional: dried cranberries or raisins, chopped walnuts or pecans
Instructions
- Preheat oven to 400°F (200°C).
- Cut butternut squash in half lengthwise and brush cut sides with olive oil. Drizzle honey and sprinkle cinnamon, salt, and pepper.
- Place squash cut side down on a baking sheet and roast for 30–40 minutes until tender.
- In a mixing bowl, mix shredded chicken with chicken broth, Parmesan cheese, onion, garlic, thyme, rosemary, salt, and pepper.
- Scoop some flesh from each roasted squash half and combine it with the filling mixture.
