  • About 12 maraschino cherries
  • 1 cup all-purpose flour
  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • Pinch of salt (optional)
  • 1 large egg
  • 1/2 cup buttermilk
  • 1/3 cup sour cream or plain Greek yogurt
  • 3 tablespoons canola or vegetable oil
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Melt the butter in a microwave-safe bowl for about one minute. Pour it into a greased 9-inch springform pan and sprinkle with brown sugar.
  3. Arrange pineapple slices and cherries on top of the brown sugar.
  4. In a separate bowl, whisk together flour, granulated sugar, baking powder, and optional salt.
  5. In another bowl, mix buttermilk, sour cream, egg, oil, and vanilla until combined.
  6. Add wet ingredients to dry ingredients; mix gently until just combined.
  7. Pour batter over pineapple arrangement in the pan and bake for about 40 minutes or until a toothpick comes out clean.
  8. Cool on a wire rack for at least 30 minutes before inverting onto a serving plate.
