  • 75g melted unsalted butter (about 5 tbsp)
  • 32 oz full-fat cream cheese (4 8oz blocks), at room temperature
  • 325g granulated sugar (1 ½ cups)
  • ½ tsp salt
  • 1 tsp vanilla essence
  • 4 large eggs, room temperature
  • 120g heavy cream (½ cup), room temperature
  • 240g sour cream (1 cup), room temperature
  • 1 tbsp cornstarch
  • 23 tablespoon lemon juice
  • 1 lb strawberries, roughly chopped in large chunks
  • 55g sugar (1/4 cup)
  • 1 tsp cornstarch
  • Juice of 1/2 a lemon

Instructions

  1. Preheat the oven to 350°F (175°C). Combine graham cracker crumbs, sugar, and melted butter in a bowl; press into a springform pan.
  2. Bake the crust for about 10 minutes until golden.
  3. Beat cream cheese until smooth; add sugar, salt, vanilla essence, and eggs one by one. Mix in heavy cream and sour cream until combined.
  4. Pour filling over the crust and bake for 60-75 minutes until slightly wobbly in the center.
  5. Cool in the oven for an hour, then refrigerate for at least four hours or overnight.
  6. Prepare strawberry compote by cooking chopped strawberries with sugar and lemon juice; thicken with cornstarch slurry.
  7. Serve chilled topped with compote.
