Ingredients

  • 1 cup whole milk
  • 2¼ teaspoons (1 packet) active dry yeast
  • ½ cup (1 stick) unsalted butter (melted and cooled)
  • ¼ cup granulated sugar
  • ½ teaspoon vanilla extract
  • 1 teaspoon salt
  • ½ teaspoon cinnamon
  • 2 large eggs
  • cups all-purpose flour
  • 2 quarts vegetable oil (or a neutral oil of your choice, for frying)
  • 2 whole graham crackers (crushed (~½ cup graham cracker crumbs))
  • 7 oz vegan marshmallows fluff
  • ½ cup (1 stick) unsalted butter (room temperature)
  • 1½ cups powdered sugar
  • 1 tablespoon heavy whipping cream
  • ½ cup heavy whipping cream
  • 1 cup chocolate chips

Instructions

  1. Warm the whole milk until lukewarm. Sprinkle the active dry yeast over it and let it sit for about 5 minutes until foamy.
  2. In a large mixing bowl or stand mixer, combine melted butter, granulated sugar, vanilla extract, salt, cinnamon, and eggs; mix until well combined.
  3. Gradually add the foamy yeast mixture into this bowl. Then slowly incorporate all-purpose flour until the dough forms.
  4. Transfer the dough onto a floured surface and knead for about 5–7 minutes until smooth.
  5. Place the kneaded dough in an oiled bowl, cover it with plastic wrap or a clean towel, and let it rise in a warm place for about 1 hour or until doubled in size.
  6. Once risen, punch down the dough and roll it out on a floured surface to about ½ inch thickness.
  7. Use your donut cutter or circular cookie cutters to cut out donut shapes. Place them on parchment paper lined trays.
  8. Heat vegetable oil in your frying pot over medium heat until hot (approximately 350°F).
  9. Carefully fry each donut for about 2–3 minutes per side until golden brown. Remove them with a slotted spoon and place on paper towels to drain excess oil.
  10. In another bowl, beat together room temperature unsalted butter and powdered sugar until creamy.
  11. Add in the heavy whipping cream and mix until smooth; then fold in vegan marshmallows fluff gently.
  12. Using a piping bag or small knife, fill each donut with the prepared filling.
  13. Melt chocolate chips in a microwave-safe bowl until smooth; dip each filled donut into melted chocolate.
  14. Finally, sprinkle crushed graham cracker crumbs on top before serving!
