- 1 cup whole milk
- 2¼ teaspoons (1 packet) active dry yeast
- ½ cup (1 stick) unsalted butter (melted and cooled)
- ¼ cup granulated sugar
- ½ teaspoon vanilla extract
- 1 teaspoon salt
- ½ teaspoon cinnamon
- 2 large eggs
- 3¾–4¼ cups all-purpose flour
- 2 quarts vegetable oil (or a neutral oil of your choice, for frying)
- 2 whole graham crackers (crushed (~½ cup graham cracker crumbs))
- 7 oz vegan marshmallows fluff
- ½ cup (1 stick) unsalted butter (room temperature)
- 1½ cups powdered sugar
- 1 tablespoon heavy whipping cream
- ½ cup heavy whipping cream
- 1 cup chocolate chips
Instructions
- Warm the whole milk until lukewarm. Sprinkle the active dry yeast over it and let it sit for about 5 minutes until foamy.
- In a large mixing bowl or stand mixer, combine melted butter, granulated sugar, vanilla extract, salt, cinnamon, and eggs; mix until well combined.
- Gradually add the foamy yeast mixture into this bowl. Then slowly incorporate all-purpose flour until the dough forms.
- Transfer the dough onto a floured surface and knead for about 5–7 minutes until smooth.
- Place the kneaded dough in an oiled bowl, cover it with plastic wrap or a clean towel, and let it rise in a warm place for about 1 hour or until doubled in size.
- Once risen, punch down the dough and roll it out on a floured surface to about ½ inch thickness.
- Use your donut cutter or circular cookie cutters to cut out donut shapes. Place them on parchment paper lined trays.
- Heat vegetable oil in your frying pot over medium heat until hot (approximately 350°F).
- Carefully fry each donut for about 2–3 minutes per side until golden brown. Remove them with a slotted spoon and place on paper towels to drain excess oil.
- In another bowl, beat together room temperature unsalted butter and powdered sugar until creamy.
- Add in the heavy whipping cream and mix until smooth; then fold in vegan marshmallows fluff gently.
- Using a piping bag or small knife, fill each donut with the prepared filling.
- Melt chocolate chips in a microwave-safe bowl until smooth; dip each filled donut into melted chocolate.
- Finally, sprinkle crushed graham cracker crumbs on top before serving!
